Fermentation in truncated cone-shaped oak vats, no temperature control, frequent punching down of the cap. The wine rests in 30 hl Slavonian oak barrels for 11 months in contact with the noble lees. The wine is then left to mature for another 12 months in the same barrels. Bottling carried out in the waning moon of September without filtration nor clarification.

Tasting Notes
Straw yellow. Perfume of acacia, hawthorn, cedar, and citrus peel, Golden apple, yellow plum. A mineral vein appears on the palate, a harbinger of vibrant flavor and freshness, with a balanced mouthfeel, emerging sapidity, slight tannins, and a spicy finish.
