Destemming; fermentation at a controlled temperature of 24-25°C; 15 days in contact with the skins; separation of the “wine flower” without adding the pressed wine. Malolactic fermentation brought to completion.
Description
Tasting Notes
Lightly concentrated garnet; when fully aerated it delights with aromas of red fruit liquors, warm earth, vanilla, pimento, tobacco whiffs, and menthol. Pungent citrus acidity and caressing tannins come together vivaciously on the palate, sealed by a woody epilogue. Aged 3 years in large barrels followed by 12 months in the bottle.
