Cirò Rosso Classico Superiore di Scala is an intensely Calabrian wine, vinified and aged in cement vats. The grapes macerate in temperature-controlled conditions for 15 days. Once the alcoholic fermentation is finished, the grapes are gently pressed. Aged 18 months in cement.
Description
Tasting Notes
Ruby red tending towards garnet along the edges. Ample spectrum of scents such as mature red fruit and roses with added notes of salt and iodine, a lightly sweet spices, chinchona, and liquorice. Soft and warm, vigorous tannins. Well-structured and backed by a moderate acidity. Long persistent finish.

Stewed Mutton with Aromatic Herbs.
