It all began with Filippo Giusti who, in 1930, decided to take up the business of winemaking. Twenty years later, his son Luigi took over the cellar of Castelferretti Castle, near today’s Falconara airport. Piergiovanni represents the third generation, maintaining the family character, while expanding the business with a new structure closer to the vineyards in Montignano di Senigallia. The old cellar is now allocated solely to the refinement of the bottled wines. “Every day I try to discover new expressions of this ancient vine,” is how Piergiovanni Giusti expresses his visceral attachment to his territory and to Lacrima, the grape to which the entire vineyard is dedicated. Approximately 14 hectares of vineyards extend over the hills between Senigallia and Ancona between 100 and 150 meters above sea level, on medium-textured soils, facing south and the sea to the east. The training system, after years of low spurred cordon, is undergoing a slow and meticulous conversion into guyot, maintaining a density of five thousand vines per hectare. Low environmental impact agriculture is practiced on thirty-year-old vines. With careful pruning and thinning, yields are contained to between 45 and 65 quintals per hectare, well below the limits allowed by the specification. In the cellar, thanks to the collaboration of Giancarlo Soverchia, Giusti is dedicated to countering the old stereotype of Lacrima which is commonly considered a light and fresh wine. By experimenting with different vinifications, Giusti has enhanced the rich aromatic potential of this grape. The selection of the bunches is done manually at the cantina, the vinification is at a controlled temperature, the malolactic fermentation is carried out in wood and the refinements are diversified according to the type. The result is a production focused on the Morro d’Alba grape in all its versions.
